What started as just a dream – a casual conversation – an idea tossed back and forth became a reality and a livelihood for the Booher family. While Gabe was still single he spent a winter doing construction in the North Idaho region and fell in love with the crystal clear lakes and rivers, the open blue skies of the prairies and the majesty of the mountains. After 2.5 years of marriage and 5 moves Gabe and Mandy were ready to do something totally different, something that they could do together. While surfing craigslist one fateful evening Gabe found a listing for a coffee shop in Post Falls that was on it’s last leg. The adventure and location appealed to the young couple so they made the leap. Armed only with faith in God’s provision, a few years of coffee experience and an entrepreneur’s spirit they packed and made the 1300 mile move to open the original Post Falls Coffee Company in February of 2010.
The early days were rough! Hauling in water every day, working long days with afternoons that brought only 1 or 2 guests to pass the time, bringing in plumbing and doing a complete overhaul on the building, without ever closing the shop during business hours; Gabe and Mandy would work 12 hour days in the shop and then head home to work even more on improvements to support the steady growth. Within 4 months they hired their first team member and took their first day off.
In February 2013 the Boohers expanded Post Falls Coffee Company to include a second location with a bakery where the delicious muffins, cookies, scones, bagels, breads, and giant cinnamon rolls are made from scratch on a daily basis. One of the company’s seven core values is “Positive and Healthy” and in keeping with that they are constantly looking for the highest quality ingredients to keep their products delicious and preservative free, both in the bakery and behind the coffee bar, tapping into local sources wherever possible.
Barely a year after opening the second store their lives were changed forever with the news that a baby was on the way. Mandy finally took a break from the coffee shop when the morning sickness hit her hard and continued to stay home when baby Troy shocked everyone and came 2 months early requiring emergency surgery and a cystic fibrosis diagnosis requiring a lifetime of round the clock care. The Boohers were incredibly thankful to have a reliable team of employees while they spent 52 days in the NICU with little Troy, leaning on God for strength and protection and provision each and every day, and watching God come through for Troy in miraculous ways. The chain of prayer warriors interceding for Troy was nationwide by the time they got to bring him home.
As Troy began to grow, so did the business and he learned to walk while Gabe and crew remodeled the third location getting it ready for a new brand and style of coffee, this time in Coeur d’Alene. Terre Coffee & Bakery opened its doors in June of 2016 with a unique purpose. While the new store was inspired by the Booher’s European Coffee Tour, they opened Terre hoping to generate the income needed for Troy’s mountain of medical bills.
Today the Boohers are busier than ever between the 3 coffee shops and the wholesale bakery location, (opened January 2017). Mandy is mostly occupied with taking care of a rambunctious toddler while also managing his health care, (but if you see her at any of the locations she’s sure to greet you with a smile and can whip up a delicious latte). Troy runs around with a smile that melts your heart and a new phrase or trick every day, and Gabe is kept on his toes leading and guiding the company and amazing team with his passion for excellence.
